PostHeaderIcon Cara: Slow down and eat a cookie, will ya?

Today's the Cookie Exchange. When I was talking it about this to someone they said "I don't have time to make cookies and then go to a cookie party."

"Too bad for you", I thought. And by the way neither do I really. But we all have the same 24 hours everyday. I don't get extra. I think finding some time to sit and enjoy the holidays and not just "The Day"is important. What's the point of all the cooking, baking , wrapping etc. if you are a tired, knot of stress the whole time?

So find some time to sit by your tree. Sit there and have a cup of tea, read a book or just be. Get dressed up and go somewhere fun. Wear red. Eat cookies until there are crumbs in your hair. Watch one of the old Christmas shows on tv. Find something for you during the next week before Christmas has come and gone.

As for me and my friends today will we have coffee and cookies and make piled high trays to bring home to our families and one for a family in our community that is having it rough this year.

I make a few of these to decorate the trays before we wrap them. They are easy to make, cute and the kids like them. Enjoy!

Santa hats

2 egg whites at room temperature

½ tsp. cream of tartar

¼ tsp. vanilla extract

½ cup sugar

Red colored sugar

Heat oven 200

With an electric mixer, beat the egg whites until soft peaks start to form. Beating all the while, add the cream of tartar and vanilla extract, then slowly add the ½ cup of sugar. Continue to beat until the peaks stiffen.

Spoon the meringue into a quart-size plastic bag. Snip off corner and pipe 2 dozen 1 ½ inch tall Santa hat triangles onto parchment paper lined baking sheet (you should have ¼ of the meringue left) Sprinkle the triangles with the red sugar, then use the remaining meringue to give each one a pom-pom and trim. Bake the hats until they’re hard but not browned, about 1 hour and 20 minutes. Turn off the oven and leave the hats in it for an hour to crisp before removing.

Hi! Stopping by from SITS! I think there is ALWAYS time to stop and have a cookie! One of life's great pleasures! We shouldn't let life pass us by so quickly that we don't take a few minutes to enjoy something like this!

Hi, Visiting from SITS. I couldn't agree with you more. I have a good friend who is always so stressed out because she can never say no to anyone's request for her time. Add the holidays to the mix and she's a mess. I wish she'd learn to take some time for herself like you and your friends.

You are so right that we need to stop and smell the roses (errr, peppermint?) this time of year. It always goes by too fast, and I find myself really bummed out by January 2nd, thinking I didn't spend enough time just enjoying the holiday season. Thanks for the reminder!
