- The stomach flu has shown up at our house - so far only claimed one victim - we shall see how long it lingers.
- You think cleaning up baby puke is gross - just wait until they are 13.
- I am longing for warmth and sunshine.
- January is whizzing by in a hurry. I haven't caught my breath from December yet.
- I am no longer addicted to shopping. In fact I have no interest in going to the stores at all!
- As bad as your day was, somebody else's was worse (kinda makes you feel better.)
- I do not enjoy cleaning up after my dogs but I do it everyday - wish everyone else did too.
- HGTV is back - WooHoo.
- Hubby is off to London tomorrow.
- January has turned out to be a much busier much than I ever imagined!
ROASTED CARROT DIP (from Rachel Ray)
4 carrots, peeled and chopped
1 tablespoon extra virgin olive oil (EVOO)
Salt and pepper
1/2-1 cup non-fat Greek-style yogurt, depending on how creamy you want it
Zest and juice of 1 lemon
Assorted veggies for dipping, such as celery, bell pepper and zucchini spears

Pre-heat oven to 425ºF.
Toss carrots and EVOO together on a baking sheet and season with salt and pepper. Roast until tender, about 20 minutes.
Transfer carrots to a food processor and process until puréed and smooth. Add yogurt, lemon zest and juice, some salt and pepper to the processor and continue mixing until smooth and combined.
Chill dip and serve cold with veggies alongside for dipping.

I served this at bookclub the other night - it was declicious - great with Pita Chips and crackers too.

this is the longest flu season ever! the carrot dip looks yummy and healthy...i am thinking maybe it might be a nice addition to the super bowl menu. happy sits saturday sharefest
