A day off. A Salute to our Veteran's and all they do and did for our country and us. A kiddie party. A little shopping. Just a good day. (and a cool date...11/11/11)

Here's the recipe I made the other night. I liked it. It was one of the recipes from my "make 20 meals in one day" experiment. You can still make it even if you didn't spend 400 hours cooking ahead of time.

Rigatoni with Apples and Squash 
1 lb rigatoni pasta
8 oz bacon
Sage
2 shallots; minced
1 tart apple; sliced
3 cups roasted butternut squash
1/2 cup grated parmesan cheese
salt and pepper

Cook pasta until al dente;drain reserving 1 1/2  cup pasta water
In large pan cook bacon until crisp; transfer to paper towels
Add shallots, and apple to pan, sprinkle with sage*
 & cook 5 minutes
(*recipe called for 10 sage leaves cooked first before shallots and apples...hubby is not a huge fan of sage so I just added some ground sage over the shallots and apples)
Add pasta, squash, cooking water, bacon and parmesan cheese
season with salt and pepper; cook until heated through
Serves 4
