Seriously in the summer it doesn't mean as much to me as during the year. But come next Friday I am sure I will be TGIF'ing....
So here's an easy-peasy-lemon-squeezy side that we make all summer. I am not a huge fan of mayonnaisey potato salad but this one I like. Stays for awhile too 'cause there's no mayo.
8 potatoes (can be white or red whatever you prefer...more if feeding a crowd)
1/2 lb fresh string beans (no canned or frozen) again more for a crowd
Olive oil
Red wine vinegar
Salt and pepper
Wash potatoes, boil with skin on until soft but not mushy. Meanwhile wash string beans, snap off ends and boil until crisp tender (again not mushy);drain then set aside to cool.
Drain potatoes when done, then run under cold water to cool. When able to handle peel skin off and cut into chunks. (or you can leave skin on if you prefer too!)
Combine potatoes and string beans in a large bowl, gently toss. Add oil, vinegar, salt and pepper to taste. Toss again.
Put in refrigerator to get cold for one hour. It can also be left covered in plastic wrap on the counter at room temperature.
