Jenn: 100 Followers, A few random thoughts and a Recipe

Thanks to Squirrel Queen for becoming our 100th follower! We are so excited to see more and more friends stopping by. Be sure to keep coming back, we have a new look coming soon to celebrate our 1 year blogiversary!
Busy weekend. Dance, dance and more dance plus a 40th surprise party for a neighbor. My boy is camping and the weather is actually going to cooperate this time. Usually if Sam is camping, then you know a monsoon,blizzard, tsunami is inevitable. The weatherman is calling for Sunny skies and mild (50's) temperatures - woo hoo. I am looking forward to getting outside and enjoying the day. I love to cook - I am not terribly adventurous and generally stick with what I know. The standards are the ones that keep my kids coming to the table - so here is a family favorite - my son is cooking it on his camp out this weekend. Super easy and sure to please! Takes 15 minutes from start to table - so great for busy weekday or weekend lunch.

Chicken Quesadilla
1 lb chicken, cut into small pieces
Olive Oil
1 package Taco mix
1 onion
1 pepper, green or red
soy sauce
hot sauce
Mexican Cheese
Tortillas
This recipe serves two, you can double or triple for your family.
In a large frying pan, cook chicken pieces in Olive Oil. Chicken should be cooked completely. Remove Chicken and saute onions and peppers, return chicken, add taco mix and water according to package directions. Add a dash of Soy Sauce and a dash of Hot sauce, Serve rolled in tortillas with Cheese. My kids like to put Sour Cream in their tacos. You can also add lettuce, tomato, guacamole etc. Serve with Rice. Enjoy!
