Last night was international night at girl scouts.  Our troop did France.  You had to prepare a food and a game or craft.  We did a game called Bilboquet or Ball in cup.  It was simple to make and the girls had a blast playing it.  For our food we did chocolate mousse - what could be more french?  I had to make enough for 70 girls - that's a lot of mousse.  So I searched the net for an easy recipe and let me tell you it was the hit of the night.  Only about 35 girls showed up for the event but we went through 100 cups of mousse - most came back for seconds and thirds. Traditional mousse is a lot of work - this recipe was as easy as it gets and it tastes pretty close to the real thing.  So give the recipe to your kids to make for mother's day - you'll both enjoy it!

Simple Chocolate Mousse

1 container cool whip
4 ounces bakers chocolate
 Chocolate Syrup
cocoa powder

Melt chocolate in microwave 30 seconds per ounce, stirring every 30 seconds.  Once chocolate has melted, let cool completely.  When chocolate has cooled, fold cool whip in.  Stir well, add  a squeeze of chocolate syrup and a dash cocoa powder.  Serve and enjoy!  Keep refrigerated until served.
