I have posted my chicken pot pie recipe in the past - it is a little time consuming - but worth the effort. Here is a quick fix version - I made it the other day when I was short on time - it was delicious.
2 lbs chicken breasts
1 bag steam fresh frozen mixed vegetables
1 can crescent rolls
1 stick butter
1 and 1/2 cans chicken broth
1/2 cup flour
salt and pepper to taste
Boil chicken breasts until cooked through - about 25 minutes. Melt butter in sauce pan, add flour constantly stirring, gradually add chicken broth, salt and pepper to taste. Cook veggies in the microwave and chop chicken. Add veggies and chicken to sauce. Stir and pour into baking dish. Cover top of chicken mixture with rolled out crescent rolls. Bake at 350 until crescent roll topping is nice and brown - about 25 minutes. Serve with a side of rice. Delicious.
Today is Aunt N's birthday and I am "making" dinner. She wants nothing but appetizers for dinner - it's her birthday so why not? Off to Costco to fill up on pigs-in-a-blanket and tacos. Happy Saturday!
