I haven't been posting on Saturdays - it's just been too hard. My weekends are filled to the brim & blogging has just taken a back seat. While we were in Paris, I ate a lot of delicious meals but my favorites were always the simple ones - salmon & salad, quiche & salad. I am a lover of salad and all the salads I had in France were mostly the same. Baby field greens with mustard vinaigrette. Tonight for dinner we are having roast beef & potatoes by request as it is feeling very fall like. I decided to do a baby field green salad too. The mix is available in most grocery stores & clubs. Here is my recipe for the vinaigrette. Bon Apetit! 1 table spoon red wine vinegar, whisked with 1 teaspoon Dijon mustard and 3 tablespoons extra virgin olive oil. Salt & pepper to taste. Delish!
