Officially Spring has sprung. The calender says so - but mother nature didn't quite get the memo yet.  The tulips are starting to pop - but they are covered in snow.  The heat is still cranked - the temperatures at night are in the 20's.  Brrr. When we see the calender says "spring" our expectations, our hopes, our dreams, are all about the warmer weather.  Each year we are disappointed when Mother Nature doesn't flip the switch on March 21st from cold to warm.  Some years the transition is easier - the warmer weather surprises us a few days early and sticks around and other years there is snow on Easter.  Since it was cold the first day of spring, I was prompted to make Cream of Broccoli Soup. It was a hit with 4/5 family members - only one refused to try it on the grounds that it looks "gross."  I thought it was a beautiful shade of Spring green - enjoy!

Cream of Broccoli Soup
1 stick unsalted butter
1 onion chopped
1/3 cup flour
4 cups milk
2 cups heavy cream
4 cups broccoli spears chopped
3 cups sharp cheddar cheese

Melt butter and saute onion for 3 - 4 minutes, add flour and stir until well combined. Slowly add milk and cream and continue to stir - add broccoli and simmer 30 minutes.  Stir in Cheese until melted.  If you like a smooth soup, you can now puree through a blender and add in some steamed broccoli or you can serve as is.  Enjoy!
