Cara: Holiday Rush
I am trying not to have to rush. Really I am. I don't like to be rushed. Seems I can't help myself. I keep thinking it's next week. Or tomorrow. What the heck????
I am making a cake to bring to Book Swap on Thursday. I need to make the dough the day before and let it sit overnight. So can you tell me why yesterday (Tuesday) I had all my stuff out, I had the softened butter in the Kitchen Aid mixer ready to roll...and then think...wait! It's Tuesday, not Wednesday. WTF am I doing?????? Erg!!!!!
I keep thinking Saturday is the 18th instead of the 11th and have sent several people who have the same craziness on the 18th as me into a panic thinking crazy day is this Saturday. I am rushing the days and the weeks.
It may be because next week is crazy week with concerts, school shows, teacher conferences, 1 million cookies to bake and out of town relatives arriving, so this poor lovely uneventful week is getting rushed.
I am not the only one rushing. People are driving like nuts too. Either not paying attention, or checking lists at stop lights causing the line in back of them to FREAK out and start beeping (that wasn't me mind you, I saw that happen). Or like the jerk behind me yesterday, that was in such a hurry to get around me cause I had the nerve to slow down to make a left, that he gunned it through the yellow/red light. This just as an old lady who certainly had her angel on her shoulder, was s-l-o-w-ly making left in front of him. She glided by and he went up on the curb and crashed into a sign. Yikes!
I am really trying not to rush the rest of the week. Good thing is I had all this new found time yesterday after I put my butter back in the fridge. So my words of wisdom for today is to not rush. Christmas will come same day it always does. Everything will get done and even if it doesn't who cares.
(feel free to remind me of that two weeks from now when I whiz by you at lightening speed!!)

Jenn: 42 Days
42 Days to Christmas and the panic is already setting in. In my fantasy world, I celeberate Christmas on a beach somewhere with frozen cocktails and kids playing in the sand and hubby lying next to me just enjoying the day. No blackberries, no computers, no nothing but sunshine and ocean vistas.
In my reality, I am it. I do all the planning, cooking, shopping, decorating. It all falls on me. Christmas sends me into a tailspin. It is the Christmas gifts that are really my undoing. If I had a chrystal ball and knew in June what my kids wanted from Santa than there would really be no issue. My kids are starting to put their christmas lists together now...and of course, everything Lu, my eight-year-old wants, every other 8-year-old must want too. The number one gift on her list this year is Monster High Dolls. Already sold out pretty much everywhere. Do I have great hope that they will come in again for Christmas? Yes, I do. But like Zuzu pets and nintendo DS and the Wii in Christmas' past, demand will far outpace availability. That means I will be online and running from store to store to try to find these things. I already have my girl friends on high alert. I will spend the next few weeks going from Target to Walmart to Kmart to Toys r us hunting them down. I could go on ebay and pay triple the retail price - but I won't do it.
The holiday rush begins. In a few years time, I will live out that fantasy of Christmas beach side but for this year, I will run and rush and try to be Merry.
Cara's two cents: I highly recommend "high alert" to your friends in your Christmas gift hunts! Put my girls on high alert for THE wrestling ring alarm clock and in less than 24 hours Jenn got it! So now you know the pressure is on for Monster High Dolls. I am on it!!! :) Oh and 42 days??? ack!!!!

Cara: Friday Farrago
I am not rushing Christmas. I am not rushing Christmas. Please repeat after me. I know Halloween's over. I know. I have put away my jack-o-lanterns until next year. But I have NOT taken out my Santas or jingle bells.
I have seen a Christmas themed air freshner TV commercial on the morning of Nov. 1st. I have had an electronic Santa wave at me in a store already. I haven't heard Christmas music...yet. And I admit I did start playing it early a little before Thanksgiving last year... a little. But stop rushing me! erg.
Since I am not cooking for Thanksgiving this year I can focus on baking supplies and maybe some online "must have" Santa shopping for the kids. But that's it. I like Thanksgiving. I plan on enjoying it. Then I will immerse myself completely in Christmas until I have had ornaments, jingle bells and garland ad nauseum.
Speaking of cooking today I will share a family recipe. My husband's family has made Potato Croquettes for as long as I can remember. Now, they are not dietetic by any means. Really, nothing my inlaws make is. But it is all delicious and I want these recipes. I want to know them. I want to be able to pass them along to my children. Auntie J. made them a few weeks ago and I asked for the recipe. Much to her horror that I have never made them...add to that the fact that I didn't have a potato ricer!!! A what??? No clue. This is what it looks like in case you didn't know:

My bff here hooked me up and bought me one she found in her travels. So I tested them out at dinner one night and they came out great and everyone wants me to make them all the time. Yeah, not happening. Like I said not exactly figure friendly. But they look nice and make a nice presentation for dinner company. The potato ricer, by the way is great for mashed potatoes. I used it to make twice backed potatoes the other night and no lumps!
Potato Croquettes a la Auntie J
1 lb potatoes* boiled, peeled
and put through ricer to make "strands"
(* 1lb= 3 medium potatoes or 3 cups or 2 cups mashed)
Pinch of salt
4 oz grated parmesan cheese
2 eggs
Mix all that together very well. Shape into balls
4oz flour
1lb* bread crumbs (2 1/4 cups)
3 eggs
4 oz milk
pinch of salt
Oil to fry
(you doubted there was frying involved??)
Mix eggs, milk an salt together in a bowl
Put potato ball in flour, then in egg mixture, then in bread crumbs and shape them longer into more ovals than balls.
Fry in oil until browned and look like this:
*(my inlaws all think I have a scale in my kitchen to weigh a pound of this or that. I don't. So I Google a pound of this or that to get the measurements)
